Cooked this up for SWMBO’s birthday Sunday.

Rubbed and ready

Put on the YS640 set to 200°F at 11pm Saturday night

6:30 Sunday morning 160°F upped temp to 230°F

Took off at 205°F. Rested 2 hours. Unfortunately no pictures sliced I got way to busy, but very tender and flavorful.
Also made butter bath chicken thighs (no pictures so maybe I didn’t really make them).

Made all these people happy, so it was a great day!

I had 2 potlucks to cook for this last weekend. Red beans & rice, Brisket, Butter-bath chicken, and macaroni salad. Smiles all around and full bellies....who could ask for more?
 
Nice job on that brisket, and it looks like a whole bunch of happy campers.
