Looks nice. About the goose it needs flash cooked seared outside but MR inside. Use this for goose marinade
1/4 cup Dijon mustard
1/4 Italian dressing
1/4 cup Dales seasoning
3 tbsp Montreal seasoning
2 tbsp garlic powder
2 tbsp onion powder.
Cut into 1" cubes then put meat and marinade in ziplock and shake well let sit over night. When putting on skewer inter twine peppered bacon on hot grill sear and cook to MR.
I have yet to have a bad goose recipe.
