Fresh, over-ripe peaches and cottage cheese. 

KFC coleslaw stirred into their mashed potatoes/gravy.

Mustard potato salad and a little Sweet Baby Ray's BBQ sauce.

Lemonade and wheat beer.

Pulled pork and mashed potatoes.

Pulled pork and crumbled corn bread.

Crumbled sweet corn bread and milk/sugar.

Sticky white rice stirred with milk/sugar/cinnamon.

(No wonder I still need to lose another 90 lbs!)
 
By the looks of Chef Jimmies list I would say we must have grown up in the same area.

I love this kind of stuff...

American cheese and beef (burgers, cheese steaks, etc.)

Blue cheese, bacon, and onions

mayo with american cheese

tomato sauce with mozzarella

apples and cinnamon

pecans and bourbon

eggs and american cheese on good bread

steak and blue/gorgonzola cheese

peanut butter and chocolate

maple syrup and bourbon

everything bagel and cream cheese

rice and beans

cilantro and cumin

shrimp and any kind of cajun or blackening seasoning

beef and SPOG

garlic and olive oil

italian bread and any kind of pasta sauce

dark chocolate and almonds

Man, I can go on forever.  As you can see I love cheese, red meat, and bourbon
 
My wife won't eat breakfast with me when I make the following using leftovers:

Uovo al Purgatorio, a southern Italian dish of fried eggs and marinara sauce (no meat). 

Add leftover garlic bread and grated Romano cheese, pure heaven.

Another personal variation is over-easy eggs on crisp, rustic dry toast smothered with leftover Bolognese sauce (spaghetti sauce with chopped meat) topped with Romano cheese. 

Dang, I'm hungry!

New England clam chowder and oyster crackers.

Marinated skirt steak grilled with green onions.

Homemade hummus and pita bread.

Pita bread and tzatziki.

Red table wine and biscotti

Coffee and biscotti

Extra Virgin Olive Oil and aged balsamic vinegar.

Aged balsamic vinegar and Parmigiano-Reggiano cheese
 
french toast / ketchup 

turkey stuffing sandwich / cranberry and mayo

and to go along with the peanut butter / peppers

 2 slices of liverwurst with a Oreo cookie in between
 
I forgot one of my favorites , when we would have a Sunday pork roast , one of the leftover meals was pancakes and gravy

Sausage gravy and chicken fried steak.

Buttermilk biscuits and sausage gravy.

Red-eye gravy, country ham, and mashed potatoes or grits.

(I'm so friggin' hungry now!)

Stop it! I haven't even had breakfast yet!

My mother made that, it was one of my favorites when I was growing up.
