What do if yiy have too many peaches??? Make dessert of course!

Had to find a way to use the abundance of peaches from our tree.
Peach Cobbler and Peach Scones seemed the way to go.

The Peach Cobbler recipe is from Southern Living.
Looks weird, but comes out great. Melt butter in baking dish, pour the dry ingredients over it, then pour the peaches on top of that, no mixing!!!
The original recipe was a bit skimpy on the crust part. Didn't come close to covering the whole top.
So I increased the dry ingredients.
Increased a bit too much as it overflowed quite a bit. Will reduce it some to try to stop the overflow.

I used my Blueberry Scones recipe, and didn't compensate for the additional moisture.
Consequently was a pretty wet dough, and took an additional 8 minutes for the toothpick to come out clean.


The Blueberry Scones recipe came from King Arthur I believe since I bought the scone tray from them.

If anyone wants recipes, I can post.

Another option is to make a shrub, which you can then mix with soda water (and/or a cocktail) for a delicious beverage, or turn it into a sauce/dressing. Shrubs have always been a great way to preserve delicious fruit flavor without refrigeration. With peach, I have used ginger + cinnamon + apple cider vinegar and also basil + champagne vinegar versions.

Man I love peaches and those look great! I have a cobbler recipe that always goes over good.

Original recipe called for 2 cups sugar. Seemed to me that was way too much.
Only used 1 cup and still plenty sweet.

CUP OF WHITE GRANULATED SUGAR HAS 770 CALORIES, SPLENDA ZERO. I'VE MADE A PIE A WEEK FOR AGES, A COUPLE YEARS BACK jcam222 jcam222 GOT ME TO TRY USING SPLENDA AND I NEVER LOOKED BACK. THERE'S NO DIFFERENCE IN FLAVOR, GIVE IT A SHOT IF YOU LIKE, SURE WORKS FOR ME! RAY

Splenda has maltodextrin in it as a bulking agent.
Some say maltodextrin is worse than sugar.
Do your own research.
I avoid Splenda when possible.

ETA - What I forgot to say is maltodextrin has a very high glycemic index.

Is the conversion rate on the Splenda container?
I had been using Sweet & Low for my ice tea.
Weaned myself off it, now just plain tea.
EDIT: I was going to say same as 1MoreFord 1MoreFord .
For calorie reduction, artificial sweetener better.
For other health issues, artificial sweeteners are not necessarily better than sugar.
