Very nice! Ive done it a few times with venison shanks and ribs! Kinda time consuming, but totally worth it in the end! Great job!

Charles, you inspired me. I came across a couple sliced shanks like yours, and put them in the crockpot this morning. Yeah, string didn't keep mine together, either. Darn tasty, though.
