Venison Sausage

    Hey SMF!

    Quick question...How long and at what temp should I smoke venison sausage?

    My buddy is bringing over some tomorrow...

    I have looked through the forums but haven't found a clear cut answer.

    Also, what internal temp should I aim for?

  2. How was the sausage made ? Was a cure used in the preparation ? These questions need to be answered before you can get a clear cut answer to yours.

    benderz85 Fire Starter friend got busy for tomorrow so the venison is out.

    However, I have decided to try a few things I haven't done yet!

    I picked up some peameal bacon and ham kielbasa from the butcher.

    I'm assuming that the bacon is to be cooked at 225-250 until temp is 160?

    The kielbasa is likely pre-cooked so I will probably just smoke for taste.

    As I read on here before..."I'm just a newbie trying newbie things!"
