Well, cooked yesterday and enjoyed today, Father's Day. Gotta love the wireless DirecTV Genie. Smoking meat and watching the US Open yesterday.

Into the pit with 3 racks of Costco St. Louis cut ribs and prime brisket.

Maintain ~250°.

Turned out better than the pics show. 2 hours in the smoke then wrapped in foil and 2 more hours in the pit.

And, the brisket. 7 hours in the smoke, wrapped in butcher paper, 6 hours in the oven at 225° convection bake. Removed at 7 am, rested for an hour, in the warmer until about 2 pm.

The ribs look great but man oh man, that brisket steals the show. Very well done across the board!! It all looks fantastic.
