Two Butts for Deer Camp

Going to my buddy George's deer camp Sunday to help with the myriad of odd jobs that need doing before rifle season starts Nov17th.
Cleaning out shooting houses, raking trails and trimming brush, corn into the silo and whatever else.
So I'm smoking a couple of Butts for him since he is BBQ deprived.
And one for general purposes, which will probably get frozen for later in the season.

I am so looking forward to a day in the woods, even if it is spent working.
And more so I look forward to those cold days in a stand, tuned in and ready for a chance at nice buck.

Two boneless Butts, trimmed, rubbed and trussed, the smaller is just over 6lbs and the larger 8lbs.
Went into the smoker around 8pm, smoking at 225°-250° with a mix of hickory and cherry.

I'm curious, are those boneless butts, and if so why did you buy boneless?

Yes they're boneless, my Costco inexplicably decided to stop carrying bone-in butts.
Butt.... I can deal with it :rolleyes:
Just more surface for rub, and some of the rubs ends up internal after trussing tightly for even cooking.

Wish I could get nice boneless. I can't do it any more. I had to get Bear Jr up here to do one for me for some BBB.

Wow, what a weird smoke.
After being separated by 6° +/- during the majority of the cook, these butts finished at the same temp and at the same time.
I went down to check ITs and they were both 190°, and both were probe tender.
I'm putting it down to them being boneless and hence not as thick as bone-in.
But to be tender at such a low IT.

Pulled one and added some SoFlaQuer's Finishing Sauce, then bagged it for tomorrow. The other one got cooled, vac bagged and frozen.

Excellent looking PP. It's rare that we get good bone-in. Most times I have to settle for boneless. Nice Job John. Now go get that deer.
