Tri-tip...

...is something that's difficult to find around me and I've only had it a couple of times, but it's been awhile. The only place that does have it occasionally is Food Lion and it's around $11/lb. which I think is too expensive.

Anyway, I was in Food Lion and looking through the meat case when I spotted 2 about 3 lbs. each that were reduced so I grabbed them. My plan was to smoke and reverse sear one so here we go...

Minimal trimming and seasoned up with Kinder's Master Salt...

Onto a kettle to smoke with some pecan...

At about 115℉, moved over the flame for the sear. Didn't get much sear because the temp jumped up quick...

Pulled at 125℉ to rest...

Fresh squash is everywhere now so I made some pan fried squash and onions, a huge favorite of my wife. Really simple, just slice a large onion and 2 squash into ¼" thick slices. Heavy drizzle of EVOO in a pan and place them in. Medium heat and don't stir them much if you want them to brown. When tender and browned to your liking, season with salt and pepper to taste...

Love the flavor and I'm really envious of you folks that can get these all the time and at a much better price than me...
 
Nice job! HEB here had it on sale recently and I grabbed a couple, I'm thinking tomorrow is a good day for one.

I’d have about 4 slices on that plate.

Now just where do all those tri-tips end up? Seems a lot of folks have a hard time finding them...
 
WOW Charles that's a great summertime meal! Fresh squash, tomatoes and a TT cooked to perfection! Very nice 😍
Local WM here also started stocking them a little cheaper than FL. And has a full fat cap if you decide to smoke like a brisket.

Thanks Keith. Fresh home grown veggies are the best, regardless of where you live. Will have to start checking Wally World for tri-tip, maybe that's where they've all gone...

had a craving today. none to be found in S FL. had to settle for prime ribeye. your looks great

That Tri-Tip looks perfectly seared to me.

Funny thing is I was looking thru Picanha's earlier today and saw one that was a little cheaper than the rest. Later I went to show my niece what I will cook for her and realized it was a Tri-Tip that was packaged exactly like the Picanha and placed with them.

Locally Tri-tip have been more expensive of the two for the last few months, I'm glad the price has dropped. In the last year it went from under $3.00/Lb up to over $9.00/Lb and this one was $6.82/Lb.

The 2 I bought were marked $6.49/lb so I couldn't pass them up. Have seen picanha at Walmart, but never tried it...
