3Lb Chuck Roast.
Due to extreme high winds , not doing the pellet grill cook.
Going to use Gas oven with Convection Roast mode. 225 ish ?
Roast has been dry brined and on a rack with drip pan, adding apple juice to pan.
Goal is to have sliced beef if possible ,otherwise will use as pulled beef?
I usually cook Chuck : Stew or pot roast.
What are yur thoughts please ?
I can also use CI Pan to reverse sear in butter ?
