Tri Tip is hard to find in FL but living in CA the for 15 years we really love and miss it but I found a local ranch that sells to the public. I am on the mailing list for them and this past week they had tri tip's for $5.99/lb. I went and purchased a little over 30 lbs(2 cryo packs)

Decided to cook up 1 cryo pack and we would freeze some and sous vide them up for weeknight meals. For the ones destin for the freezer I cooked to 120°-125° degrees. The 2 I did for dinner I took to 132° and 134°.

Here they are Resting after the cook. You can see one of the ones we had for dinner as it had the temp probe in it.

good looking grub. Our local Latin grocery store gets them once in awhile from Argentina.
Not always the nicest cuts or sizes, but tri-tip nonetheless.
 
Looks great Brian. Did you use some kind of mustard sauce? Has a yellow tinge that is intriguing.

I can get tri tip on sale from the local butcher for $6-$7/lb but it's a bit outta the way for me. The local grocery stores are at $10-$14/lb.
Those ones look like great eats. Very nicely done.
 
Brian, it looks like you hit pay dirt with your new source. I'd love to find a source like that...

Have you looked at Publix or asked the butcher at Publix?
Our Publix has been stocking them for quite some time, even if they don’t have them they can order them for you. Or you can get USDA Prime tri-tip from wild Fork foods. Happy Thanksgiving!
