Tri tip again

Had some family in town from Ohio who never really had tri tip so I decided to make them some. Just used spog and cooked it with high heat. Turned out really good everyone was happy with it.

I love me some tri tip. I've been doing about one a week since May. I like to do a reverse sear though. I smoke it at 225 to an IT temp of about 120, then I crank the heat to about 350 and open the sear plate of my Pit Boss and give it about 1 minute on each side and they come out damn near perfect.

You ever use the cast iron and rosemary butter before? That was what I did but it mostly seemed silly to add a rosemary stalk to me ....fancy but silly :)

No, I haven't tried that. Not sure I would do that with a tri tip, but sounds like a great idea for a nice big rib eye steak!
 
Butter basting T.T. is the way to go.
Rosemary and garlic go perfectly It.
Hot and fast over dirrect coals is the way to go, for sure.
