Excuse my lack of knowledge, but what makes it a "double" smoke?

I would have never thought of that. It is super simple to see the logic in it, I guess I was too stuck on the mouth watering pics above to allow my brain to function properlyWhen you purchase a ham the majority of the time they are smoked from the factory. So when most people cook them they just reheat in the oven. When you use your smoker your double smoking it adding lots of great flavor to it.
