I have a great offset smoker, and I was looking into a pizza oven. I settled on something I could use as a pizza oven and a grill. I got the recteq bullseye deluxe. This unit goes to 1000 degrees. I have to say it is a solid unit I am very pleased with how it responds. I got the pizza stone kit and it is well designed. Prior to this I made pizzas on a steel plate in the oven. It did well, but I could not get the oven hot enough. Last night I ran the bullseye deluxe at 700 degrees cooked the pizza in 6 minutes, and it worked incredible. Below is the pizza dough recipe and I have to say I am thrilled with the bullseye deluxe, and I would highly recommend it. I made the poolish on Friday and let it sit in the fridge until last night and wow these were the best pizzas I have made. I used charcoal pellets last night and also have wood pellets to use as well.

Poolish

300 grams water

5 grams Yeast

5 grams Honey

300 grams 00 pizza flour



Add Poolish

700 grams water

1100 grams flour

30 grams salt



30% semolina



Add polish

Water

Flour





Let rest for 30 minutes



8 dough balls

My sil has an "ooni" pizza over but its one of the less expensive models. Have yet to figure out how to make a pizza on it without burning the top of the pizza or undercooking the bottom. I'd rather pre-bake the crust in the oven and do the rest on a stone on the weber kettle, just seems easier.

Looks like it turned out pretty good.
Give bread flour a try instead of 00.
I think you will like it better for that recipe and temp.

Update on the Recteq. I have now cooked chicken steaks and pizzas and they have all been incredible. This was my second pizza cook and that was the main reason I got it, and I am blown away. I used bread flour instead of 00 pizza flour and the crust was even better, and cooked at 750. Thanks for the suggestion O2ebz06 on using bread flour. They are chicken bacon with garlic butter, Margarita, Margarita with prosciutto ham added. One my daughter wanted that was fantastic was a Thin layer of bbq sauce, mozzarella, bacon, and cream cheese. Cook the pizza then when its done put crumbled ritz crackers, green onions and drizzle with honey, sounds weird but incredible. Also an Italian salad with feta cheese added. Highly recommend this pellet grill worth the money.
