I just finished reading Marianski's book. Wow, now trying to get my head wrapped around all the info.
 
I know what you mean.... After reading it, I had to make notes on specific stuff and note the page numbers so I could refer to it... It's a very thorough book on just about everything to do with meats.....
 
Good book but just starting out keep it KISS

Keep

Simple
Stupid

Then venture out from there.

It is definitely a major project, I have used many of the recipes in that book. They all turned out good. But it is definitely a long process. This is a great site for plenty of videos on dry cured sausage. I have followed several of these recipes as well.
