Making your own sausages?

When you grind your chuck do you just buy Chuck Roast or something different? I'm wanting to grind some beef for sausage and trying to find the cheapest whole meat to buy for grinding. Chuck Roast is through the roof.
I normally buy a whole chuck roll, so I can save a few thick slabs of chuck roast for pot roasting. But there is nothing wrong with buying a few chuck roasts to grind, it just costs a little more. Any time a Butchers knife touches your meat, you are paying for his time and experience, as well as the price of the meat.

that's what I was trying to find. I didn't know what it was called, but i knew there had to be something before the chuck roast. As you said, once the Butcher's knife touches it the cost goes up. Thanks!
