Thai Curry using leftover Skewered Shrimp & Pork Loin

Only me for dinner last night so did what I like. Had some leftover raw shrimp and some smoked pork loin that I put on skewers and fired up the grill. While that was working I got some chicken broth going, added a splash of fish sauce, can of coconut milk, mushrooms, onions, Thai  red curry paste (enough to crack a good sweat),Italian  parsley, small pack of Udon noodles and a handful of bean sprouts at the very end. Grilled off the shrimp & pork quickly and laid them across the top of the bowl.Sweet Mother in Heaven, it was delicious!! 


 
Wow that does look delicious!! I've changed my mind on what to have for dinner tonight 3 times already. Now I'm torn...
 
That looks phenomenal!  I just recently realized that curry acts as an appetite suppressant for me.  I've been putting it on everything and just bought the spices today to make my own.  Gonna make curry smoked almonds this weekend.  Just might have to try Chef Willie's recipe above.  Thanks for posting!
 
That is great, a fav of mine. The other killer Thai dish you should try is similar. Try Green Curry with Asparagus and Scallops! Awesome! Only other changes are Cilantro instead of parsley and stirfry 1tsp ea Garlic and Ginger, sear the Scallops and remove. Add the Asparagus, Onions and whatever else and proceed as above. When veg is tender and sauce reduced, return the Scallops just to heat through. Serve with Jasmine or Sticky Rice. Yum...JJ

Alright if we are gonna be throwing down recipes...

I make a green Thai curry chowder that is wicked good! Basically a new England clam chowder with green Thai curry, lemongrass, coconut milk, patis and hon-dashi broth.

Btw I had a whopper jr for dinner. Chef your dinner was SO much better than mine!!!

Sounds over the top AND I have some green curry, bought at the same time as the red paste. the Italian parsley was hanging out in the fridge as was the shrimp, left over loin, sprouts and 'shrooms. Love scallops.....especially BIG dry scallops.....yum...thx for the ideas

Now, that sounds killer and I'm a big fan of the clam chowder and all the other ingredients mentioned...another must do meal. Swore off BK after the corporate move to avoid taxes. We have Carls Jr (Hardees elsewhere) a better burger anyway IMO.....
