Thai Green Curry Soup

Was not planning on posting but it was so good thought I would share. I dont know why I dont make curry more often. I buy those little cans of curry paste. For just me I use 1 cup chicken broth and one cup coconut milk. I saute veggies in some oil than add 1/2 can curry paste. Add liquid and bring to simmer. I used some thawed rotisserie chicken from freezer. I add chicken than turn off burner and let sit about 5 minutes. I bought some basil for some Pho so I used that and added jalapeno. The ingredients I used are in attachment. I only used green curry. I did not measure anything. Also had made a Greek salad. Pic is from the leftovers. It really tames the heat from the curry. I love this salad. Now I got to find some decent olives. I used that mustang grape vinegar I had made for the dressing. Wow is that stuff good! Going to use the other half can of coconut milk to make this killer coconut lime shrimp recipe I got from Bobby Flay years ago.

Looks great and reminds me I haven't made any Thai curry dishes in some time.
My wife doesn't like mushrooms so I substitute thin sliced bamboo shoots
 
Looks great! I love coconut curries! The shrimp sounds interesting too
I thought it was Bobby but that a different recipe I was thinking about. This is the recipe I was talking about. So simple but so good. Made it so many times.

Thanks David. I love Thai food. Mixing curry paste with coconut milk is magical. You can put just about anything in there. Red probably my favorite. First time making Greek salad and wont be the last. Would be great even without the olives.
