Why don't I make curry more often? This was pretty tasty! Maybe my favorite dish of the year.

Steak is a Ribeye I smoked. I just love my barrel grill. Smoked until 115 than quick sear.

The line up. First basil leaves from my indoor garden. Made yellow squash noodles. Not pictured is some ginger in a squeeze bottle I had bought. Man is that good stuff!

Heat some of coconut milk with couple Tbsp of curry paste.

Add rest of coconut milk, fish sauce, red pepper flakes and Truvia brown sugar and simmer couple minutes.

Add veggies except noodles and simmer 4 minutes.

Add noodles and simmer 1 minute.

Remove from burner and add basil and lime juice and meat. This was some kind of good.

Thanks. I meant to make a salad but starting cooking before I remember. Was a little bit of a chore prepping. I still have that green curry shrimp on the list.
Oh man green curry shrimp.....yum yum....

My wife is going to the "big" town this week for a couple of days and that means a cooler full of fresh ingredients from the HUGE Asian store there.... This weekend is going to be full of yumminess at our house too!
 
Wow Brian, that looks incredible. Absolutely outstanding!! Love your plans for future cooks also. Sounds like you've got it all figured out and I can't wait to see the next installment.
