This is another Butcher recommended cut of beef , and another you don't see alot . After he turned me onto the chuck eye steaks , I followed his lead on this too . Very tender cut . I was really surprised . 3 cooks , done a bit different . First one came from the butcher @ $10.99 a lb .

Seasoned with steak seasoning , wrapped and in the fridge . Couple hours .

I cooked these indirect with mesquite chunks , no sear .

Resting and sliced . Tender and juicy .

So these are fantastic . At 10.99 a lb . Not sure about the price . Those 2 steaks were right at 1 pound . Good way to feed a couple of people for 10 bucks .

So I was at GFS one day looking for something to smoke . They had cryo vac'd " Chuck Tender " Which to me is a roast . So I bought one .
I was surprised when I got home , they were Teres Marjor untrimmed . Six in the package .
I paid $35.00 for the 6 . I think it was $5.35 a lb . Well worth that price .

So the 2nd cook I seasoned the same , but held under vacuum for a couple of hours .

Cooked indirect with some smoke , then seared .

These got away from me . I do alot of cooking by feel on the kettle . These are so tender it's hard to tell how done they are .

3rd and best cook was straight over the coals .
Seasoned the same , but right on the fire no hold time .

It's a great cut of beef if the price is right . Went up to $5.99 a lb at GFS already .
Works good for the family that some like rare / well done or in between .
One thing I don't like is buying high dollar steaks and watching someone pic at it because it's " bloody " or having to cook it well done .
Just thought I would put it out there , thanks for lookin .
 
It's one of the cuts that comes with the shoulder clod, along with the flat iron steaks. You are right-very tender cut of meat. I believe it is the 4th most tender cut on the animal. If you buy the whole clod, it's usually $2.50~$3.00/pound. I like to separate both out and cook them as steaks.
 
Thanks Chris, really good info. Looks like I need to see if I can find this cut locally.

I have the same vacuum setup you do and use it all the time.

P.S. - Still have 2 chuck eyes in the freezer from Safeway that I need to try for tenderness....maybe I will do them Saturday night!

Know of them, never seen them locally. I miss my Cut to Order, restaurant connections...JJ
 
Great cut and a great gook Chop! I've seen them and bought them before. I just couldn't stomach their price. Especially when I can get the tri-tips for less and in my mind just as equal if not better. LIKE!

At $10.99 a lb , if it's just me , I'll buck up and go ribeye , but was worth it the first time .
At 5 to 6 bucks a pound , well worth it . I'm going to go and buy another pack tomorrow .
I have only seen tri tip here one time . It was $14.99 a pound .

The second cook temped at 140 plus when I pulled it . Still extremely tender .

Nice looking steaks Chop and a good demo on your different methods of cooking them. Cook number three is screaming EAT ME from my screen. That's how I like to do flanks when I decide to pony up for them.

Yeah , the reason you don't see alot of these is it takes some work to get at it , and you only get one per shoulder . Just not worth that to save a buck .

Exactly---I do everything like that:
If I need an Oil Filter, I just buy the Oil Filter. I don't buy a whole engine, and take it apart for an Old Filter.
Maybe I'm just Lazy.:emoji_wink:

One more cook , just thought I would add it .
Cooked inside in a cast iron grill pan . Came out like roast beef . Really good like this . OK , that's it . I promise .
