I put a 9lb bone-in butt on my GMG Davy Crockett at 9pm last night. 225 the whole time with no crutch.
Right now one side of the butt is 205+ but the other side, close to the bone is a bit over 160. Should I just keep the low and slow going until the part by the bone hits 205 before failing to rest? Haven't really seen a temp differential that large before but my butts in the past have been the boneless ones from Costco.
