I'm still an amateur at this smoking and I'm still fighting trying to regulate the temp in my CharGriller side firebox smoker.  It goes from one extreme to another and then when you open the firebox to add more wood/charcoal, there it goes again.  Now that it's winter in Colorado, will I ever be able to smoke something for Christmas, etc.?  Thanks!

Fire regulation is something that will come with practice. You need a good bed of coals and then you can regulate it with the air flow vents Atleast that how I do it when I'm smoking on a wood burning smoker.
