Pork butt from Costco 15 lbs, ground it up & made 5lbs of andouille sausage that will go into the smoker tomorrow the fry test was good & spicy should be good once smoked. Took 5 more lbs & made a cordon blue brat with cubed ham & swiss cheese, these are great with brown mustard,

The third type is sauteed portabella & onion, swiss brats, these are really good.
 
Dang it man thems lookin good!!! I just traded doing some smoked salmon for a guy (his salmon) and for payment he brought me two pork butts

Good lookin job Murray. I just pulled a batch of andouille last night from its second smoke and cooked it. Its blooming in the reefer now. That NOLa recipe is pretty good. Andouille is hard to beat for flavor.

Thanks foam, double smoke dang I had a hard time not sampling after one smoke & finishing in oven, I barely let it cool before cutting into it.
