Sat. was a busy day Had to smoke the Brisket for Sunday

Trimmed the fat down to about 1/4"


Started the WSM 


S&P


Smoked till IT was 203


Sunday sliced



Slice some Velvita 


Put it on a long roll and nuked

Looks like a great job Richie.  That brisket looks pretty darn good from here.  I can just imagine that sammie with horseradish and REALLY old cheddar.

One of these days I'll have to try a brisket.
