A guy here in the park caught wind of some smoke. Asked me if i ever made Summer Sausage. Said yeah i been known to make a few pounds.

Today he brought me 10 lbs of GBCH and said how much? I said we can talk about that later.

I showed him some pics and stuff and that i have a new recipe i would like to try. He said what is it.....Pastrami SS

He is happy.

10 lbs. Going to start tomorrow so i can smoke on friday/sat
