Ok I was patient, now its the weekend lets see it!!

Had some internet issues along with rain and rain and more rain and also moved the rig to a prime site.

Finally got the pastrami SS stuffed and smoked.


Using hickory pucks.


Weather came in again.


2 darker got done faster...Why? Maybe the new site...muaa hahaha. Blooming while the other catch up. Going in the fridge for a couple days.


Pastrami SS Recipe.

5 lbs of 80/20 GCH

4 t non iodized salt

4 t light corn syrup

4 t black peppercorns, cracked

1 level t cure 1

1 t onion powder

1 t garlic powder

1/2 t cayenne

1/2 t paprika

1/2 t oregano (you can grind into powder if you like)

1/4 t allspice

1/4 t ginger powder

1 cup distilled water

3/4 cup NFPDM

Mix in your normal way and incorporate into meat
 
That looks great.

What size are those casings?

I gotta try that on my next go round with SS. Did it taste like Pastrami?

Maybe cube up some Provolone in it? Instant Sammie.

Mix is good but i think needs a pinch of jalapeno powder (but thats just me)

Yes i will use the mix again.

The one small chub i saved for myself is gone. The other chubs are only 2 left that i made for the guy in the park.
