Hello all. Here now researching my 1st bacon. Bought myself a MES 40, AMPS, n maverick about 2 months ago. Gift to myself for remodeling the bathroom. Since then have smoked a few chickens, beef roasts, and whatever i can shove in there. Everything has turned out spectacular. One thing for sure, this is a wonderful site to look up some base recipes and research, as well as stumble across crazy recipes almost beyond my imagination.
