Decided to spin some ribs with the Octoforks I got last week. Put some strips of pork that someone called csr's and chicken thighs in the dome while 2 full racks of spares spin under them. Cook them in the dome was around 350 and drum them 500-600. Used oak and maple for the wood fire.







These were very good. Moist, tender and perfect smoke flavor.

Two full racks on a roti?  That's pretty sweet!  The way it looks much more can fit on like that.    They look great, awesome color.  500-600* and not burnt, that's impressive.

How was the stuff in the dome lid?

That stuff was for my parents. My dad said it was the best meat he has ever had, and he is picky.

I know it never gets old when my Dad says "it's the best ..."   

One you're a good cook and the 007 sure can turn out good food!
