Bought two racks of spares today. Usually I do baby backs I've only smoked spares once didn't turn out great. I didnt trim them last time, this time I trimmed them St.Louis Style.
 
Whipped up a new batch of Jeff's original rub and tomorrow I will be making a new batch of Jeff's BBQ sauce my favorite sauce I've ever had i cant stand store bought after having it. I will have to tone down the cayenne though the old lady doesn't like that much heat. Here they are trimmed cut down to 1/2 racks and rubbed with Jeff's Rub
 
I was thinking making carnitas or smoked pork tacos would be a good use for the skirt and other trimmings. Does anyone have a good seasoning or marinade for that?
 
Getting a late start after a trip to costco. Just heating the smoker up now and the snow is starting to fall. 60 degrees last week winter weather advisory this week for lake effect snow. I will be smoking with hickory and maybe cherry. Thinking about running the smoker at 250 to get them done alittle faster.
 
Smokers only been running at 200 hit 225 for a while kinda weird i cant get it up to temp. I didn't have a problem the other week when it was a high of 15 out
 
Usually do my ribs dry but decided to sauce them with Jeff's Sauce.
 
Paired with sautéed carrots in butter and herbs and sweet potatoes with brown sugar and butter
