I am getting ready to enter my first comp in two weeks and wanted to try spares vs BB.  I went by my local market and picked up a rack of each.  The spares were already st. luis cut.  What do you guys think - let the butcher cut them or do it yourself?

Bottom line; the spares came out better IMHO.  

Question : do you guys usually sauce your ribs?  I typically do not, but put a little on these.....
 
Looks good. I don't make ribs a lot but I generally let people put on their sauce. I also havent dun a comp so can't commit on it as far as technique, but I'd imagine something that gives a little shine helps aesthetically.
