Evening fellas and non fellas and those of you assuming another pronoun. Had a rack of spares I wanted to smoke. Trimmed them into st Louis cut. Seasoned with kosher salt and coarse black pepper and onto the smoker using hickory pellets at around 250-260

About 3hrs in hit them with a spray of apple juice

Went no wrap on these. At the 5hr mark I mopped with this. Stuff is absolutely delicious.

Looks delicious to me, I am cooking ribs as I type this, but won't have 6 hrs. Will have to do with pushing them as only have 4 hrs. I'm jealous for sure.
