Late to the party David but that's one great looking meal and definitely deserving of your win.
Never had oxtail either but have been tempted . Now YOU pushed me over the edge ! Local soul food eatery here serves it once a week with rave reviews but haven't had a chance to stop in.

It was my first real venture into soul food , and glad I did . The ox tail was out of this world good. Just sooo tender and the flavours.

I keep looking for it to go on sale so I can try some more. I went to a lot of stores to get some good size pieces, not just the tail tips .

Hi Brian , nice of you to ask, and also hope you did not need for last nights supper.

for 1 bunch of Collard Greens, I wash them good , as some times full of sand / grit
So wash and rinse. Chop into 1" - 1 1/2" strips, remove the tough core at the ends.

I do all this in 1 big sauce pan.
I cook bacon pieces ahead of time and remove, than sauté onions in the bacon fat and leave in pot. Add the chopped greens into the pot
and let wilt off for about 5 minutes ( if you like garlic you can add chopped garlic same time as the greens )

Now add about 1 1/2 cups of chicken stock ( or just water if no stock, you will just need some salt and pepper than ) and the bacon
( save a few pieces of the bacon to add to top for garnish on the plate

Let these simmer in the pot COVERED for about 40 more minutes, or until tender.

taste and see if more salt and pepper are needed, I like to add a little vinegar to mine because I like the tart of it , or even lemon .
