In two weeks my girlfriend will be coming to stay with me for the weekend (she lives out of state).  She is the one who gave me the smoker as a Christmas present.  I want to smoke something for her but i won't be able to tend to the smoker for hours on end.  I am looking for something that I can do in 2 - 3 hours.  I would like to do either beef or pork.  Any suggestions?

I would ask your girlfriend to help you with the smoke. Heck she gave it to you so she most like it to. Now for what to smoke I would say you should smoke a chicken because thats about the only thing that will smoke that quickly.
