Thought I’d share a few pics of my build. I’ve built a few steel smokers that have served me well for the past 15 years but have always wanted a masonry smoker, and finally got bored enough to build. My goal is to hopefully have a smoker that I can leave for 4-6 hours at a time, much like I do my green egg. Pics aren’t the greatest as I live in the city and it’s being build on my side easement, so space is tight. Total footprint is 10’x42”. Fire chamber and smoke box are double wall and fully insulated

Found some ribs on sale this week that I couldn’t pass up, hoping to get them on the smoker this weekend

Mad e a little more progress this weekend, built an insulated smoke door and got it mounted, and built two sets of grills for the Santa Maria. Couldn’t have asked for the door to line up any better

Ugh on the 'vid. But good progress thus far. Thinking that test cook you got going would make me feel pretty darn good!
Jim

Thanks for the compliments guys. Seems like it cooked a bit faster than a steel smoker at the same temp, may be the way the brick radiates heat. Will drop down to around 210-215 on the next smoke

Didn’t seem to use to much wood and held heat well, kept over 200 degrees for 5 hours after I shut off the air

Glad it worked good for you!! That smoker looks awfully good full of meat!!
Thanks, I’m glad to get it to this point, been working on it for a month of evenings and weekends, finally get to start on the pizza oven

Almost finished. Covered oven in leftover pool plaster I had from another project, will get painted. Smoker works great
