It had been awhile since we had beef fajitas. Stopped by Kroger and grabbed 3 lbs of skirt, nice and thick. Seasoned with a Rojo fajita seasoning from one of our local super Mercados.

Seasoned a few hours before I grilled them. Hot fire on the Weber, took just a few minutes.

Delish! Served on white corn tortillas with fresh guacamole, sautéed bell peppers and onions, house salsa, and cheddar.

Thank you y'all, I'm humbled by your words. I try to post occasionally so folks know I still have a heartbeat. Beef fajitas are always a sure win. Our daughter will eat leftover meat for breakfast, lunch and dinner until it's gone.

Super fast and simple, ironically it takes significantly longer to get the tortillas cooked than the rest of it. Skirt is going for about $9 a pound around here.

All good stuff. Skirt around here is in the 12 dollar range. Enjoy, it’s delicious.

$9 per lb is a steal. I think one of the last times I looked it was $15-18 ($1-2 more and you get ribeye or porterhouse). Kind of dumb considering I live in the northern cattle country of the US. I'm starting to line up more local producer's that sell, that way if I am paying the little extra at least I know the money is staying in my area and not going to to who knows where plus the quality is far better

I like that, when I buy from the farmers market I know it is from a ranch within 100 miles, it's a requirement to sell anything there.

The one family owned in the area has really blown up, Josh has done a great job. We grew up 2mi away from each other, great family friends, grew up working cattle together and helping between families. He decided to grow shortly after high school and college and I was too scared to go with him, sometimes I kick myself but I got a pretty good life still. Still great people and worst case scenario if I was to loose my current job tomorrow I could start working for him the next day if I had to.
Building what they have now by no means has been easy or without it's stressors while building or even to this day.
