Smoker From Washington State

  1. Hey guys, been lurking here for quite awhile thought I'd do some posting.

    Been smoking for quite awhile, I have for the past 10 years been using small brinkmanns and a cardboard box---I know hoborific right? Done mostly turkeys and briskets in them, Now I want to start cold smoking some cheese and I've been wanting a bigger smoker it appears I always get nominated to do the cooking when events come around so I'm sure an RF trailer mounted smoker is in my furture.

    Little more about me,

    Work/restore VW's, was hardcore aircooled now turned watercooled....vanagons are my specialty or any early watercooled vw.

    What got me in to grilling/smoking was the lack of places to eat good cooked meats in the northwest, we finally got a texas roadhouse they are pretty tasty but still don't compare to some good hole in the wall bbq down south.

    I'm currently looking at MES but toying on building my own, I own pretty much any metal working tool you can think of, mig/tig/arc/plasma/tube bender/metal brake.

    Well if you want an RF I guess the MES is temporary.

    If you have access to a welder and are pretty handy with it you may as well go ahead and start on your RF build.   The cardboard box is all you need for cold smoke and the little brinkmans will get you hot smoking for now.  There are quite a few members that have built smokers.  As a matter of fact would a UDS get you going until you build the large RF?

  3. I thought about a UDS, thats pretty much the same thing as my brinkman (smoke-n-grill, AKA R2D2) only it would be a little bigger

    As for starting my RF now, I haven't decided yet...storage is a big issue for me and it would need to be smaller, I thought I could build one with a slip in format (think slip in camper jacks) and I also could use the trailer for hauling and then leave my smoker stationary to use at home...this is about the only way it would work for me.

    First off welcome to SMF. You'll really like this place for there are a bunch of really good folks here that would just love to help you with just about anything to do with smoking meat. Then if you have any questions you just post them here or yu can try in chat for a faster answer. If you are really new to all of this I would recommend that you look up and take the e-course. It is free and it will also give you the basics on smoking. So with all that said now go and get something to smoke.

I picked up this puppy at lowes today, got it for under 150 with a buddies discount, I was worried about quality after looking at highend models this size at another store but after setting it up its actually really decent, this should be great to do some cold smoking in and also do some half biskets.

    I have two huge pork tenderloins in the freezer that I'm going to smoke tomorrow morning [​IMG]
