Nice cooler day out today. 77F and a perfect day to fire up the Smokefire. I eat a lot of pork tenderloin and decided to do kabobs instead of whole this week. I've done plenty of chicken souvlaki but never pork. Ran the pit temp at 275F for a bit and then up to 325F. Results are delicious but next time I'm going to work on some char at the end. I'm still learning this awesome machine. I was impressed that at 325F it still puts out a steady and healthy amount of TBS. Marinade was pretty simple 2 cups of olive oil, 1 cup lemon juice. 1/2 cup red wine vinegar, 3 oz of dehydrated minced onion, 3T minced garlic, 3T Greek oregano ,8t kosher salt and 2t MSG. I usually use fresh onion but needed to use this dehydrated onion up. The smell of this cooking was intoxicating. Served with some sour cream based tzatziki , a squeeze of lemon and some fresh chopped cilantro. Thanks for looking

There are deals to be had and on used ones. Just make sure it's a Gen 2. Also ask what parts have been replaced on it. Feel free to reach out in PM for more info if you find one and have questions.
 
Nice job and a well deserved congrats on the ride! I had a SERIOUS greek/gyro/soulvaki phase. Got lots of info from a buddy of mine who is greek in the pre internet days. He told me think of gyro or soulvaki as sandwich or snack. Kinda like hamburgers here in the US. VERY wide open interpretation of marinades/ingredients so no right or wrong and anything goes. That said, that marinade of yours is about identical as ours. Lots of people assume its lamb but legit gyro/soulvaki in Greece is almost always pork! Sometimes chicken but very rarely lamb. That ground beef lamb loaf we all know is not used AT ALL. They typically add french fries or fried potatoes to theirs. Sorry not keto but it's a WICKED good add but cannot put my finger on why. I am sure you know this but for others that don't, pita needs to be cooked. Tastes like carboard raw. I oil and sear quick on the grill. All this being said, never ran any as pork. Got me inspired.
