this looks like a chaudin pronounced show dan, Its a pigs stomach stuffed with a rice and sausage dressing then smoked.this stuff is great.

after smoking we always sliced and used for sandwich's good stuff. Growing up My Dad owned and operated a Meat Market in Rayne La. so he use to make it.Kind of hard to find these days unless you go to a specialty meat market.
