Smoked Chicken Thighs (Hickory Smoke)

    Smoked Chicken Thighs  (Hickory Smoke)

    Mrs Bear wanted some Chicken Thighs, and I wanted them smoked, so that’s the plan.
    Thawed out a 10 pack of Thighs, and below is what happened from there:

    Day #1 (Prepping):
    Rinse Thighs, Dry, Coat with EVOO, apply Rub, Put on wire cooling racks in two Disposable Foil Pans, and put in Fridge over night.

    Day #2 (Smoking)
    12:00 PM------------Preheat MES 40 to 225*
    12:00 PM------------Fill one row of AMNPS with Hickory Pellets, and light one end.
    1:00 PM-------------Put AMNPS on bottom Rack, and Thighs on top two Racks.
    3:00 PM-------------Bump Heat up to 270*
    3:30 PM-------------Rack #2 was at 156°, and Rack #1 was at 172°. Pulled Top Rack & covered with foil.
    4:00 PM-------------Rack #2 was at 170°. Pulled Rack #2.

    All Thighs ranged between 168° and 174° Internal Temp.
    Took Pics, added Sides, and More Pics. Time to eat.

    Absolutely---My favorite too.

    I usually get lazy, and let Mrs Bear Bake them in the oven at 350° for an hour. Then I throw them on my Weber "Q" with a little sauce to sear them up & Grill Mark them!!

    But this time I decided to Smoke them.

    That's really a beautiful color on the thighs, John.  I prefer the white meat, but those sure look good to me.

  18. I have been using a brine on my chicken thighs with good success.
    Sea Salt, and Thai Basil and some Thai Chili sauce and bit of fresh garlic.

    the last ones were smoked with mulberry wood.

    Beautiful thighs, Bear (nice birds on the feeder, too). 

    You know you don't have to do what Mrs Bear wants. You could just ignore her (as long as your health insurance is paid up).

    Points for listening to a good wife and ignoring advice from guys like me.
