Another good smoking on the new Bayou Classic. BB was 7 pounds. Smoked at 250. In exactly 7 hours it was done with internal at 200 degrees. The smoker holds the temp very will with basically no messing around with the air. Had to add bunch more charcoal after 3.5 hours which is not bad for a smaller stick burner.
