That is picture perfect. The Coppa roast is my favorite roast on the entire hog. I made a larger version last night. Pork neck roast takes second place but they are hard to find and you have to work around the bones.

Thanks Bear! It was delicious! Making some corn bread tonight to go with some chili.....(Bears favorite) two batches . One regular one with jalapeno.

I have not heard of Coppa Roast - but yours looks amazing (Like!)

I searched the web for Coppa Roast and this was one of the first things that showed up (in pictures)... @disco 's step by step
I can buy a pork butt and, with a little butchering, get one that way. It looks like an awesome, juicy, tastycut for sure!

Thanks Eddie!! Yep I was cutting up pork butts to make sausage so I cut some of the coppa roasts out of some. Super tender and delicious!
