Thanks thirdeye! I'm going to have to agree with you...one of the best parts of the hog..this one turned out really good!That is picture perfect. The Coppa roast is my favorite roast on the entire hog. I made a larger version last night. Pork neck roast takes second place but they are hard to find and you have to work around the bones.
