Breakfast taco burrito. Well it was going to be a burrito but as usual I put too much filling in.

Mix two eggs up
Preheat your favorite 8 or 10 Ci pan. Used my Field #10.
For the filling I used leftover taco meat and beans, cheese, olives, sour cream & salsa. Sky’s the limit on what you use.

Once the pan is preheated pour in eggs. Immediately place a tortilla on top.

I reheated my leftover taco meat

When eggs have set flip and add filling. Cook
until the tortilla is done to your liking. Fold into burrito or if you used to much filling in half! Serve.

Heck yes, could definitely devour that! I have the same issue of overstuffing!

Now that is a cool idea Case!
I’ve made breakfast tacos before, but never that way.
I always mix the filling with the egg, then wrap it in a soft taco when done.
I will definitely give this a try!

Looks like my kind of breakfast! Nice work. I'll have to give this a try. Might have to use my non stick skillet....im pretty clumsy flipping eggs in my cast iron for some reason.....

Excellent looking burrito Case.

I'm relieved to learn that I'm not the only one who overfills their burrito's. Trouble is, I almost always overfill.

Looks great and I'm right there with you on Overloading Burritos, of all styles! Similar to Al, my Wife, will heat the Meat and Veg, stir in 3 Eggs, let set, top with Cheese, then layer in a 12" Tortilla and Roll...JJ
