Sirloin roast in a Friday night? Why not? The pork worked last week. Nothing crazy just a roast with SPG and on the Pit Boss.

Yum, I love the beefiness of sirloin, I bet that it turns out great.
Are you going for sliced or shredded beef?
 
Trying new things is the spice of life… if you have some left let it cool and slice it thin cross grain.
 
Momma is not a fan. Says is too chewy. Guess I can see that. Win some you lose some.
Don't give up on it . It's a great cut of beef .
Roast whole ( no pan or wrap ) to an IT of 135 .
Knife and fork meal .

If some one doesn't like the medium rare / red color , reheat with warm ( not boiling )
beef stock . That's how I do sandwiches . This is from the same roast plated above .
Fridge overnight , then sliced thin . Cover with warm beef stock or Lipton beefy onion soup .
As the slices warm they soak up the broth . Super tender and big flavor .
Takes the red color out also .
