Recipe ideas for sirloin tip roast?

Hi everyone!

I picked up a sirloin tip roast yesterday for $4.99/lb. because it seemed cheap to me…
I cut it up into 6 smaller pieces and vacuum packed them and put em in the freezer.

Now I need some ideas on how to make them! What is the best IT for them to keep them from drying out? Can you make pulled beef from them or not?

Looking forward to hearing from you all…

At 15 plus pounds that's the whole knuckle . I was doing a bunch of those before the price went over 6 bucks here . Great cut of beef .
I break it down into it's individual muscle groups , following the connective tissue lines .
Here's a general tread I did on buying them whole , breakinging down , and how I use it .

I didn't know the first time either . If you cut across the sinue , roast whole and slice thin .
Post a picture of what you ended up with if you can . Just curious to see what muscle groups are involved .
I also do a beef stock reheat on these that works great for sandwiches or even knife and fork meals .
 
I have them vacuum sealed and in the freezer, so I can’t get a very good picture…

I cut it straight down from the top the whole way through… lol not very professional!

That's fine . No real wrong way .
I started buying and breaking down beef primals / sub primals during Covid . Around 2019 .
I learned as I went , but used this website to know what comes from where , and how it's normally processed .
This is the whole primal section , then it shows the sub primals , and how the sub primals break out .
Scroll down the page and it shows the Knuckle / Sirloin tip .

@chopsaw beat me to it. Don't sweat it. Made many cuts like that and turned out just fine! Main thing on this is to pull low IT as this is a lean cut. I am gonna be running one myself for the first time.

cook the pieces on the rotisserie, slice thin and make italian beef or philly sammies. I like to add green chilies on mine.

You have a recipe?

Place meat in crock pot.
Top with 1 packet powdered Au Jus Mix
Top that with 1 packet Ranch Dip Mix
Top all that with 1/2 stick of butter cut into smaller pieces.
Add a few Pepperoncini Peppers.
Cook on low 4 to 6 hours or until it's buttery

Do NOT add any other liquid.
Do NOT add juice from the Pepperoncinis
