Labor Day 09
A few good friends and grins on the menu for labor day so decided to feed everyone with a simple meal of PP, brisket, ABTs, Snake Bitten Wicked Beans, homemade Kielbasa and Italian sausage, creamy slaw, and Sandy’s Aunt Gale’s crunchy sweet banana salad. The wood of choice was Pecan and Pear. I skipped prep pics since all was my basic injection and rub the night before. Butts and brisket went on at 7 am and ABTs, sausage and beans went on about 12:30. Supper was timed well and the meat rested about an hr in a dry cooler until 5:30 pm.

We all laid around moaning and groaning full as we could stand to be after supper. Left overs today will be made into Chimichangas. Don’t know if it is spelled correctly but will be a first for me so pics may follow later tonight or tomorrow.
