My wife and I owned a BBQ restaurant on the Oregon coast for 10 years and are now moving the operation to Nevada to get back closer to family.  Our main focus will be a food trailer so anyone with input on setting up a trailer would be welcomed.  We have done lots of festivals and events but always with a booth.  

We are also looking at electric smokers for both the servicing area (depot), and the trailer.  Wanted to see if there were any advantages over my current smokers.  Mainly I'm thinking simplicity and cleaner.

Welcome to the forum!

Most of the BBQ joints or trailers I've seen all use large wood burning smokers.

Personally I don't think you get the flavor with an electric smoker.

I think you would be better off to stay with what you have.
