I wanted some snacks for football ,so I did ABT's and Scottish eggs(again).I steamed a load of bantam eggs to make smaller meatballs.
Very simple recipe, I use 4 pounds of Jimmy Dean breakfast sausage, two hot and two regular and mix them well.
Steamed for 7 minutes(distracted and did a batch too long) and then chilled before covering with the sausage.
All rolled up and into the smoker for about 3 hours (it was COLD out) at 225* with hickory and Jeffs' rub added outside so as not to make a mess.
They made a great munchie while watching some football on Sunday!
