New way for me to use leftover sausage from the stuffer

I have always just fried up my sausage meat that ended up in the bottom of my stuffer. My fairly new 25# electric stuffer leaves quite a charge in the bottom and I thought I would try something different. I just did 12 #of jalapeno summer sausage and this was the meat that was left over:

I flattened the meat out ,cut it in half and added some mozzarella cheese.

Rolled these babies up and added a rub to them .

Smoked for 2.5 hours at 225* with some cherry chips .

These little jobbies came out very tasty and hot as the rub was spicy and the leftover farce was jajapeno summer sausage.

I’ve never used these but Walton’s makes a “stuffer flusher egg” that you drop into the can when empty then run the piston back down and the flusher will push the rest of the meat out of the throat of the can and stops at the stuffer tube. Maybe this will help someone out.

SE, I have heard of folks putting ice cubes in their stuffer to get more meat out. This egg gizmo looks quite interesting and a better idea. I never had a problem with my TSM stuffers as they clean almost every last bit out.

My two stuffers (5# and 10# LEM) have the straight outlet and doesn’t leave really all that much, although the 10# more so than the 5#. But anybody with the drop down elbow outlet should look into these eggs. In their short video they look easy to use, and while they don’t remove 100% of the mince it looks like 90-95% so really pretty handy.
