I saw a quick video (Tik Tok?) of someone doing this the other day and thought I'd give it a try. For the 1st time, I did it as shown in order to form a baseline, and it was fine, but now I know how I'd change it.

I pressed a sheet of room temp puff pastry into a 6-cup muffin pan by pressing another pan on top. Cracked an egg into each one, and added chopped bacon, S&P, and chopped green onion. Used a toothpick to scramble the egg somewhat, and mix the rest in.

Then a pizza cutter to separate the cups.

Baked at 350° for about 20-25 minutes.

Next time, here's what I would do differently:
1. Brush dough with melted butter before filling.
2. Scramble the eggs together first, then pour into the cups.
3. Add a shake or two of hot sauce to each cup.
4. Double the bacon bits.
5. Maybe cook it on the RecTeq? Couldn't hurt.

Anyway, I can see how this can be modified to suit the individual's taste.
